Spicy Thai Basil Chicken (Pad Krapow Gai)

  • 1 Wok or large frying pan
  • 2 Wooden spoon or spatula
  • 3 Knife and cutting board
  • 4 Measuring cups and spoo
  • 5 Garlic press (optional)
  • 6 Mortar and pestle (optional)


  • cup chicken broth
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce, or as needed
  • 2 tbsp fish sauce
  • 1 tbsp white sugar
  • 1 tbsp  brown sugar
  • 2 tbsp vegetable oil
  • 1  pound  skinless, boneless chicken thighs, coarsely chopped
  • ¼ cup sliced shallots
  • 4  cloves  garlic, minced
  • 2 tbsp minced Thai chilies, Serrano, or other hot pepper
  • 1 cup very thinly sliced fresh basil leaves
  • 2 cups hot cooked rice


  • Step 1
    Gather ingredients.

    Whisk chicken stock, shellfish sauce, soy sauce, fish sauce, white sugar, and earthy colored sugar together in a bowl until very much mixed

    Heat enormous skillet over high intensity. Sprinkle in oil. Add chicken and sautéed food until it loses its crude tone, 2 to 3 minutes.

    Mix in shallots, garlic, and cut chilies. Keep cooking on high intensity until a portion of the juices begin to caramelize in the lower part of the dish, around 2 or 3 additional minutes.

    Add about a tablespoon of the sauce blend to the skillet; cook and mix until sauce starts to caramelize, around 1 moment.

    Pour in the remainder of the sauce. Cook and mix until sauce has deglazed the lower part of the dish. Keep on cooking until sauce coats onto the meat, 1 or 2 additional minutes. Eliminate from heat.

    Stir in basil. Cook and stir until basil is wilted, about 20 seconds. Serve with rice.
